Christmas Pound Pudding

  • 500 g mixed dried fruit
  • 100 g dried dates, chopped
  • 5 cm piece preserved ginger or a 5ml spoon dried ginger
  • 125 g suet
  • 125 g plain flour
  • 125 g sugar
  • 150 g breadcrumbs
  • 2 tbsp brandy
  • Pinch of salt
  • 1 medium size egg, beaten
  • 150 ml milk

    Grease a 1.5 litre pudding basin. Mix all the ingredients together except for the eggandthemilk. Addthebeateneggandmilkandmixwell. Putthemixtureinto the basin, cover with aluminium foil or a cloth. Place in a large saucepan with water halfway up the sides of the basin. Bring the water to the boil, put on a tight fittinglidandsimmerfor3hours.Checkoccasionallyrememberingtocarefullytop up with boiling water to stop it going dry.
