Chocolate Fudge Cupcakes

  • 4 squares of semisweet chocolate
  • 1 3/4 cups of sugar
  • 1 cup of flour
  • 4 eggs
  • 1 teaspoon of vanilla
  • 2 sticks of butter
  • 1 cup of pecan halves

Instructions

    Melt the chocolate and butter together and stir in the pecan halves, coating well. Set the chocolate/pecan mixture aside to cool.

    Combine the sugar, flour and the eggs mixing by hand, blend but do not beat, the batter will be stiff.

    Stir in the chocolate mixture and vanilla. Mix well.

    Fill cupcake pan full with batter.

    Bake in a 325 -degree oven for 35 –40 minutes.

    Do not over bake.

    Cool a few minutes before removing from pan.
