Chocolate Cream Brulee

Silky chocolate custard with caramelized sugar topping.

  • 8 oz Dark chocolate
  • 1 0.5 cup Heavy cream
  • 0.5 cup Whole milk
  • 5 each Egg yolks
  • 0.3 cup Sugar
  • 1 tsp Vanilla extract
  • 2 tbsp Sugar for topping

Instructions

    Chop chocolate finely.

    Heat cream and milk together.

    Pour over chocolate and let sit 2 minutes.

    Stir until smooth.

    Whisk egg yolks with sugar until pale.

    Slowly pour chocolate mixture into yolks while whisking.

    Strain through fine sieve.

    Add vanilla extract.

    Pour into ramekins.

    Place ramekins in water bath.

    Bake at 325 degrees F for 12-15 minutes until set but slightly jiggly.

    Chill completely.

    Sprinkle sugar on top and torch until caramelized.
