Chipotle Adobe Chicken

- 2 lb chicken thighs or breasts, boneless, skinless
- For the marinade:
- olive oil
- 2 chipotle peppers, in adobo sauce, plus 1 teaspoon adobo sauce
- from the can
- 1 tbsp garlic, minced
- 1 shallot, finely chopped
- cumin
- 1 tbsp cilantro, super-finely chopped or dried
- 2 tsp chili powder
- 1 tsp dried oregano
- 0.5 tsp salt
- Fresh limes, garnish
- Cilantro, garnish

Preheat griddle to medium-high. Add marinade ingredients to a food processor or blender and pulse into a paste. Add the chicken and marinade to a sealable plastic bag and massage to coat well. Place in the refrigerator for 1 hour to 24 hours before cooking. Sear chicken for 7 minutes, turn and cook and additional 7 minutes. Turn heat to low and continue to cook until chicken has reached an internal temperature of 165°F. Remove chicken from griddle and allow to rest 5 to 10 minutes before serving. Garnish with a squeeze of fresh lime and a sprinkle of cilantro to Servings.
