Chinese Chicken Casserole

  • 1 fryer fryer chicken, boiled, de-boned and cut into bite-size pieces
  • 1 can cream of mushroom soup
  • 2 cup chopped celery
  • 1 small onion, grated
  • 2 tbsp lemon juice
  • 0.5 tsp salt
  • 0.5 cup cashew nuts
  • 3 oz crispy Chinese noodles
  • 0.5 cup grated Cheddar cheese

Instructions

    Preheat oven to 350°F. Reserve 1/2 can of noodles and 1/4 cup of cheese for the topping.

    In a large bowl, mix together chicken, mushroom soup, celery, onion, lemon juice, salt, cashews, and the remaining noodles.

    Pour into a casserole dish.

    Combine reserved noodles with remaining cheese and sprinkle over the top.

    Bake for 30–40 minutes until bubbly and golden on top.
