  • 2 medium zucchini, cut in half lengthwise and thinly sliced
  • 1 pint cherry tomatoes, quartered
  • 1 medium green bell pepper, chopped
  • 1 medium onion, chopped
  • 0.5 lb sharp white Cheddar cheese, diced
  • 0.3 cup mayonnaise
  • 2 tbsp cider vinegar
  • 2 tbsp sugar
  • 1 tbsp fresh dillweed (1 tsp dried)
  • 0.5 tsp garlic powder
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

    In a large bowl, combine the zucchini, tomatoes, green pepper, onion, and cheese; mix well.

    In a small bowl, combine the mayonnaise, cider vinegar, sugar, dillweed, garlic powder, salt, and black pepper; mix well.

    Add the dressing to the vegetable mixture and toss until well coated.

    Cover and chill for at least 2 hours before serving.
