Chilled Aromatic Shrimp
Shrimp marinated in a cilantro-ginger-lime mixture, sautéed, then chilled and served with a lush green cream sauce.

- 1 cup fresh cilantro, loosely packed
- 1 tbsp fresh ginger, chopped
- 2 clove garlic
- 2 whole scallions, sliced
- 1 whole jalapeño pepper, halved and seeded
- 1 tsp sugar
- 0.5 tsp salt
- 3 tbsp mild vegetable oil
- 3 tbsp fresh lime juice
- 1 0.5 lb medium or large shrimp, peeled with tails on
- 1 cup heavy cream

In a food processor, combine cilantro, ginger, garlic, scallions, and jalapeño; process until finely chopped. Add sugar, salt, oil, and lime juice; mix well.

Toss shrimp in marinade until well-coated. Cover and let stand 1 hour at cool room temperature or longer in refrigerator.

Sauté shrimp (without additional oil) until barely cooked. Arrange on serving plate and chill.

Add reserved marinade to pan liquid; boil, stirring, until liquid evaporates to a thick green purée. Add cream and boil again until thick. Refrigerate sauce with shrimp until chilled. Serve together.
