Chili Queen Chili

  • 2 each lb. beef, cut into 1/2-inch cubes
  • 1 each lb. pork, cut into 1/2-inch cubes
  • 0.3 each C. suet
  • 0.3 each C. pork fat
  • 3 each onions, chopped
  • 6 clove garlic, minced
  • 1 each qt. water
  • 4 each ancho chiles, seeds and stems removed, chopped fine
  • 1 each serrano chile, seeds and stems removed, chopped fine
  • 6 each dried red New Mexican chiles, seeds and stems removed, chopped fine
  • 1 each T. cumin seeds, freshly ground
  • 2 each T. Mexican oregano

Instructions

    Lightly flour the beef and pork cubes.

    Quickly cook in the suet and pork fat, stirring often.

  3. 3

    Add onions and garlic and sauté until they are tender and limp.

  4. 4

    Remove all pieces of fat.

  5. 5

    Add the water to the mixture and simmer for 1 hour.

    Grind the chiles in a blender or molcajete.

  7. 7

    Add to the meat mixture.

  8. 8

    Add remaining ingredients and simmer for an additional 2 hours.

  9. 9

    Skim off any fat that rises, then serve.
