Chili-Beef Casserole
Ground beef with chili beans and tomato soup spooned over corn chips and baked with green onions, black olives, and sharp Cheddar cheese until melted and bubbly.

- 1 0.5 lb lean ground beef
- 1 can hot chili beans (16 oz)
- 1 can tomato soup, undiluted
- 0.5 tsp chili powder
- 0.3 tsp salt
- 0.3 tsp black pepper
- 2 cup corn chips
- 6 green onions chopped
- 1 can sliced ripe olives, drained
- 1 cup shredded sharp Cheddar cheese

Preheat oven to 350°F. Cook ground beef in a large skillet, stirring until no longer pink. Drain.

Add chili beans, tomato soup, chili powder, salt, and pepper. Cook over medium heat, stirring, for 8–10 minutes.

Place corn chips in a lightly greased 11x7-inch baking dish. Spoon meat mixture over chips.

Sprinkle with half the green onions, olives, and cheese.

Bake uncovered at 350°F for 20 minutes until bubbly and cheese is melted.

Garnish with remaining green onions and serve immediately.
