Chile Rice Casserole

- 3 cup cooked long-grain white rice
- 3 cup sour cream
- 1 tsp salt
- 1 can (7 oz) diced green chiles
- 0.8 lb Monterey Jack cheese, cut into strips
- 0.5 cup cheddar cheese, grated
- 0.5 tsp black pepper

Preheat oven to 350°F (175°C). Butter a 1.5-quart casserole.

Season cooked rice with salt and pepper. Combine sour cream, salt, and green chiles in a bowl.

Layer in the casserole: rice, sour cream mixture, Monterey Jack strips. Repeat for 2–3 layers, ending with rice on top.

Bake for 40–45 minutes until heated through.

Remove from oven, sprinkle grated cheddar over the top, and return to oven for 5 minutes until cheese melts. Serve hot.
