  • 1 each 3-1/2 pound stewing chicken
  • 2 slice fresh ginger root, about 1/2 inch thick
  • 2 each green onions, quartered

Instructions

    Place the chicken in a stew pot and cover with water.

    Add the ginger and green onions.

  3. 3

    Bring the water to a boil and skim surface of scum and foam.

  4. 4

    Cover pot, reduce heat, and simmer chicken for about 2 hours.

    Strain broth.

  6. 6

    Use chicken in other recipes.
