Slow Cooker Chicken and Sausage

- 1 tbsp olive oil
- 4 clove garlic, crushed
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 small zucchini, chopped
- 8 oz canned mushrooms, drained
- 14 oz canned Italian stewed tomatoes
- 6 oz tomato paste
- 0.3 lb hot Italian sausage, sliced
- 2 boneless skinless chicken breasts
- 1 tsp Italian seasoning
- 0.3 tsp red pepper flakes (optional)

Heat olive oil in a skillet over medium heat. Sauté garlic and onion until lightly browned.

Add sausage and chicken to skillet; brown on all sides. Drain and pat dry.

In slow cooker, combine all vegetables, tomatoes, tomato paste, Italian seasoning, and red pepper flakes. Stir together.

Add browned sausage, then lay chicken breasts on top.

Cover and cook on LOW for 6–8 hours until chicken is tender.

Shred or slice chicken. Serve over pasta or polenta.
