Chicken, Rice and Broccoli Casserole

  • 4 whole boneless skinless chicken breasts, cubed
  • 2 cup cooked white rice
  • 16 oz frozen broccoli florets, thawed
  • 10 0.8 oz condensed cream of chicken soup
  • 1 cup milk
  • 1 cup shredded Cheddar cheese
  • 0.5 cup crushed butter crackers
  • 2 tbsp butter, melted

Instructions

    Preheat oven to 350°F.

    Season chicken cubes with salt and pepper. Cook in a skillet until just done. Drain.

    Combine chicken, cooked rice, broccoli, cream of chicken soup, and milk. Mix well.

    Pour into a greased 2-quart baking dish. Top with shredded Cheddar.

    Toss crushed crackers with melted butter; sprinkle over cheese.

    Bake uncovered at 350°F for 35 to 40 minutes until golden and bubbly.
