Chicken Cutlet Paillards with Basil Butter

  • 4 skinless, boneless chicken breast halves
  • 1 tbsp olive oil
  • 6 tbsp butter
  • 3 tbsp fresh basil, minced (or 1 tbsp dried)
  • 1 clove garlic, minced
  • 1 tsp fresh lemon juice
  • 1 tsp salt and pepper to taste
  • 1 lemon, sliced for garnish

Instructions

    Place chicken breasts between sheets of plastic wrap and pound to 1/2 inch thickness.

    Brush the paillards lightly with olive oil. Season with salt and pepper.

    Grill or pan-sear over medium-high heat, about 3–4 minutes per side, until cooked through.

    While the chicken cooks, melt butter in a small pan with the basil, garlic and lemon juice.

    Spoon the warm basil butter over the cooked chicken. Garnish with lemon slices and serve immediately.
