Ingredients

Servings
7
  • 1 lb chicken breast
  • 1 whole onion, chopped
  • 4 tbsp butter
  • 2 stalks celery, chopped
  • 4 cup fresh corn kernels (about 6 ears)
  • 2 whole medium boiling potatoes, diced
  • 3 0.5 tbsp flour
  • 3 cup chicken stock
  • 1 cup heavy cream
  • 1 pinch salt and pepper to taste

Instructions

  1. 1

Melt butter and cook chicken over medium heat without browning — when glistening, lower heat and simmer 10 minutes until firm. Cut up and set aside.

  2. 2

Purée 2 cups of corn until smooth.

  3. 3

From the chicken drippings, sauté onion and celery until soft. Sprinkle with flour and cook until bubbly.

  4. 4

Add remaining ingredients (remaining corn, potatoes, chicken stock, puréed corn, chicken). Simmer 15 minutes until potato is tender.

  5. 5

Stir in cream, salt, and pepper. Heat and serve. Serves 6-8.
