Chicken Corn Chowder

- 1 lb chicken breast
- 4 tbsp butter
- 1 onion, chopped
- 2 stalks celery, chopped
- 4 cup fresh corn kernels
- 2 medium boiling potatoes, diced
- 3 tbsp all-purpose flour
- 3 cup chicken stock
- 1 cup heavy cream
- 1 tsp salt
- 0.5 tsp black pepper

Melt butter and fry chicken over medium heat until glistening, about 10 minutes. Cut up and set aside.

Puree 2 cups of corn until smooth. Keep remaining kernels whole.

In the same pan, sauté onion and celery in drippings until soft.

Sprinkle with flour and cook until bubbly. Add pureed corn, whole corn kernels, potatoes, and chicken stock.

Simmer 15 minutes until potato is tender. Stir in cream, reserved chicken, salt and pepper.

Heat through and serve hot.
