Chicken Corn Bread Casserole

  • 4 cup crumbled corn bread
  • 1 0.5 cup cooked chicken, coarsely chopped
  • 0.3 cup chopped green bell pepper
  • 0.3 cup chopped celery
  • 0.3 cup chopped onion
  • 1 can cream of chicken soup
  • 2 can chicken broth (13.5 oz each)
  • 1 tsp poultry seasoning
  • 1 tsp salt

Instructions

    Preheat oven to 350°F. Mix corn bread crumbs with bell pepper, celery, onion, and seasonings.

    Place half of the corn bread mixture in a 2-quart baking dish. Spread chopped chicken on top.

    Combine soup and broth; pour over chicken. Cover with remaining corn bread mixture; press down lightly.

    Set aside 20 minutes, then bake 45 minutes until golden.
