Chicken Coq au Vin (Crockpot)

French classic — whole chicken pieces braised low and slow with wine, mushrooms, and whole onions until fork-tender.

  • 2 whole frying chickens, cut up
  • 16 small whole onions
  • 0.5 lb mushrooms, sliced
  • 1 tsp salt
  • 0.5 tsp thyme
  • 0.3 tsp pepper
  • 1 cup chicken stock
  • 1 cup dry white or red wine
  • 3 tbsp flour
  • 3 tbsp butter

Instructions

    Place onions in bottom of slow cooker, then add all other ingredients except flour and butter.

    Cook on LOW heat 8–10 hours or HIGH heat 3–4 hours.

    To thicken sauce: remove 1/4 cup liquid from cooker. Melt butter in saucepan, stir in flour and liquid.

    When blended, return thickened mixture to cooker and stir to combine.
