Chicken Coq Au Vin

- 1 whole frying chicken (3-4 lbs), cut into pieces
- 16 small whole pearl onions, peeled
- 0.5 lb mushrooms, sliced
- 1 tsp salt
- 0.5 tsp dried thyme
- 0.3 tsp black pepper
- 1 cup chicken stock
- 1 cup dry white or red wine
- 3 tbsp all-purpose flour
- 3 tbsp butter

Place pearl onions in the bottom of the slow cooker.

Add all remaining ingredients except the flour and butter. The chicken pieces should rest on top of the onions.

Cook on LOW for 8 to 10 hours, or on HIGH for 3 to 4 hours, until chicken is very tender.

To thicken sauce: remove 1/4 cup of cooking liquid. Melt butter in a small saucepan, whisk in flour, then whisk in the reserved liquid.

Pour the thickened mixture back into the slow cooker and stir to combine.

Serve with crusty French bread or over egg noodles.
