Chicken Caesar Pita

- 4 boneless skinless chicken breasts
- 0.5 tsp salt
- 0.3 tsp black pepper
- 6 cup chopped romaine lettuce
- 0.3 cup shredded red cabbage
- 0.3 cup shredded carrot
- 4 pita breads
- 4 tsp shredded Parmesan cheese
- 0.3 cup white vinegar
- 0.5 cup olive oil
- 0.5 tsp garlic powder
- 2 tbsp grated Romano cheese
- 2 tbsp grated Parmesan cheese (for dressing)

Make Caesar dressing: dissolve a pinch of gelatin in ¼ cup water; heat briefly until dissolved. Add vinegar, then whisk in olive oil. Add garlic powder, Worcestershire, black pepper, herbs, Romano, and Parmesan. Refrigerate until chilled.

Season chicken with salt and pepper. Grill or pan-cook over medium heat 5–6 minutes per side until cooked through (165°F/74°C). Slice into strips.

Toss romaine, red cabbage, and carrot together.

Fill each pita with the salad mixture and grilled chicken strips.

Drizzle Caesar dressing over filling and top with shredded Parmesan.
