Cheesy Chicken Florentine

  • 6 boneless, skinless chicken breast halves
  • 1 tsp salt and pepper to season
  • 2 tbsp vegetable oil
  • 2 pkg (12 oz) frozen spinach souffle, defrosted
  • 2 cup cooked white rice
  • 1 cup milk
  • 1 cup shredded Swiss cheese, divided
  • 0.3 cup chopped onion
  • 2 tsp Dijon mustard
  • 1 cup coarse fresh breadcrumbs
  • 2 tbsp butter, melted

Instructions

    Season chicken with salt and pepper. Sauté in oil until golden on both sides. Chicken will finish cooking in the oven.

    Combine spinach souffle, rice, milk, ½ cup Swiss cheese, onion, mustard, and salt in a large bowl. Spread into a 9×13-inch pan.

    Place sautéed chicken on top of spinach mixture.

    Mix breadcrumbs, melted butter, and remaining Swiss cheese. Sprinkle over casserole.

    Cover with foil and bake at 375°F for 25 minutes. Uncover and bake 35–40 minutes more until set and chicken is cooked through.
