- 3 eggs
- 2 tbsp sun-dried tomatoes, chopped
- 2 tbsp mozzarella cheese, shredded
- 1 tbsp fresh basil, chopped
- 2 tbsp ricotta cheese, shredded

Preheat the griddle to medium heat. Spray griddle top with cooking spray. In a bowl, whisk together eggs, sun-dried tomatoes, and basil. Pour egg mixture on hot griddle top and cook until eggs are done. Mix together mozzarella cheese and ricotta. Add mozzarella mixture on top of the omelet and cook for 1-2 minutes.
