Cheese Quesadillas With Guacamole

Crispy pan-fried flour tortilla quesadillas with Monterey Jack, cheddar and green chilies, served with fresh guacamole.

  • 2 avocados, peeled, pitted and chopped
  • 0 juice of two lemons
  • 2 tsp minced garlic
  • 0.3 cup chopped red onions
  • 0 to taste salt, pepper and hot sauce
  • 8 large flour tortillas
  • 1 cup grated Monterey Jack jalapeno cheese
  • 1 cup grated cheddar cheese
  • 1 can chopped green chilies
  • 1 tbsp vegetable oil

Instructions

    For the guacamole: In a bowl, mash the avocados with a fork. Add lemon juice, garlic and red onions. Mix thoroughly. Season with salt, pepper and hot sauce. Set aside.

    Sprinkle a quarter of each cheese over four tortillas. Add some green chilies. Top with the remaining four tortillas to form quesadillas.

    In a saute pan, heat 1 tsp of oil over medium heat. Pan-fry each quesadilla for 2-3 minutes per side until golden brown. Repeat with remaining quesadillas.

    Cut each quesadilla into wedges and serve with the guacamole.
