- 2 tbsp olive oil
- 1 tsp herb de Provence
- 2 oz cheese
- 8 olives, pitted
- 1/2 tsp salt

Add eggs, salt, olives, herb de Provence, and olive oil in a bowl and whisk well.

Preheat the griddle to medium heat.

Spray griddle top with cooking spray.

Pour egg mixture on hot griddle top and cook for 3 minutes or until omelet lightly golden brown.

Turn omelet and cook for 2 minutes more.
