Cheese Calzones
Homemade calzones stuffed with ricotta and mozzarella cheese, baked in a hot oven until golden brown. Serve with tomato sauce.
Ingredients
- 1 0.5 cup warm water, 105°F
- 4 0.5 cup all-purpose flour
- 1 tbsp olive oil
- 2 0.5 tsp sugar
- 2 0.5 tsp salt
- 0.5 tsp yeast
- 1 lb ricotta cheese
- 1 cup shredded mozzarella
- 1 pinch black pepper

Mix warm water with sugar and salt until dissolved. Add oil then flour; stir with a heavy spoon for 1 minute. Turn out and press into a circle. Sprinkle yeast evenly over dough and knead 12 minutes.

Divide dough into 6 oz. portions (yields 5). Shape into smooth balls, set on plate, cover with plastic, and proof 1-2 hours.

Mix ricotta, mozzarella, and black pepper together for the filling. Preheat oven to 500°F.

Take a dough ball and spread with fingertips to a 6-inch circle. Place 2/3 cup cheese mix on one side and fold over; seal edges tightly. Cut a 1-inch slit in the top.

Place calzones on a lightly greased baking sheet. Bake in center of oven 10-12 minutes until golden brown. Serve with tomato sauce.
