Charleston Shrimp and Grits

- 1 cup peeled shrimp
- 2 tbsp fresh lemon juice
- 3 tbsp bacon grease
- 1 small onion, finely chopped
- 0.3 cup chopped green bell pepper
- 2 tbsp all-purpose flour
- 1 cup hot chicken or shrimp stock
- 4 cup water
- 1 cup stone-ground grits
- 2 tbsp butter
- 0.5 tsp salt
- 0.3 tsp cayenne pepper

Cook grits in salted water according to package directions; stir in butter when done.

Heat bacon grease in a skillet over medium heat. Add onion and bell pepper; sauté until soft.

Sprinkle flour over vegetables and cook 5 minutes, stirring, until golden.

Gradually add hot stock, stirring constantly until thickened. Season shrimp with lemon juice, salt, and cayenne.

Add shrimp to sauce and cook 3 minutes until just pink. Serve over hot grits.
