Chalupa (Crockpot)

Slow-cooked pork roast with pinto beans, chili powder, and green chilies — serve with corn chips, avocado, and shredded cheese.

  • 1 lb pinto beans
  • 3 lb pork roast
  • 7 cup water
  • 0.5 cup onion, chopped
  • 2 clove garlic, minced
  • 1 tbsp salt
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp oregano
  • 4 oz green chili peppers, chopped (1 can)

Instructions

    Put all ingredients in a crockpot, dutch oven, or heavy kettle.

    Cover and simmer about 5 hours, or until the roast falls apart and the beans are done.

    Uncover and cook about 30 minutes until desired thickness is achieved.

    Serve with corn chips, chopped tomato, avocado, onion, shredded lettuce, grated cheddar cheese, and hot sauce.
