  • 3 lb pork roast
  • 1 lb dried pinto beans
  • 7 cup water
  • 0.5 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp salt
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp dried oregano
  • 4 oz green chili peppers, chopped (1 can)

Instructions

    Put all ingredients in a Dutch oven, crockpot, or heavy kettle.

    Cover and simmer about 5 hours, or until the roast falls apart and beans are done.

    Uncover and cook about 30 minutes until desired thickness is achieved.

    Serve with corn chips and condiments: chopped tomato, avocado, onion, shredded lettuce, grated cheddar cheese, and hot sauce.
