Cavatelli Sausage With Broccoli

  • 2 cup dried cavatelli or other small shell-shaped Italian pasta
  • 0.5 lb sweet Italian sausage (about 3 links)
  • 2 clove garlic, minced
  • 1 bunch broccoli
  • 1 0.3 cup low-salt chicken broth
  • 0.3 cup raisins
  • 1 tbsp unsalted butter
  • 0.5 cup Parmesan cheese, for serving

Instructions

    Squeeze sausage from casings and sauté in a heavy skillet. Stir until no longer pink and sausage has broken down into small chunks. Remove sausage with a slotted spoon, leaving juices in pan.

    Cut broccoli into 1-inch pieces and sauté in the sausage drippings. Stir gently until it begins to brown.

    Add garlic and sauté 1 minute more.

    Add broth and raisins and simmer until broccoli is tender, about 3 minutes. Do not overcook.

    Add butter and stir to melt. Combine with sausage.

    Cook pasta according to package directions. Drain.

    Add sausage and broccoli mixture to cooked pasta and serve with Parmesan cheese.
