Cavatelli with Sausage and Broccoli

  • 2 cup dried cavatelli or other small shell pasta
  • 0.5 lb sweet Italian sausage (3 links)
  • 1 bunch broccoli, cut into 1-inch pieces
  • 2 cloves garlic, minced
  • 1 0.3 cup low-sodium chicken broth
  • 0.3 cup raisins
  • 1 tbsp unsalted butter
  • 0.3 cup Parmesan cheese for serving

Instructions

    Cook cavatelli in boiling salted water according to package directions; drain and set aside.

    Squeeze sausage from casings and sauté in a heavy skillet over medium heat, breaking it up into small chunks, until no longer pink. Remove with a slotted spoon, leaving drippings in the pan.

    Add broccoli to the drippings and sauté, stirring gently, until it begins to brown. Add garlic and cook 1 minute more.

    Add chicken broth and raisins, then simmer until broccoli is tender, about 3 minutes. Do not overcook. Stir in butter until melted.

    Combine broccoli mixture and sausage with the cooked pasta. Toss well and serve with Parmesan cheese.
