Cat Litter Casserole

A playfully named party dish — seasoned ground beef and cheese nuggets served over fluffy white rice to look like a cat's litter box. A guaranteed conversation starter.

  • 1 cup biscuit baking mix
  • 1 cup shredded Cheddar cheese
  • 1 lb ground beef (or turkey or pork sausage)
  • 2 cup long grain rice
  • 3 0.8 cup water
  • 2 tsp salt
  • 2 tbsp butter

Instructions

    Preheat oven to 350°F.

    Mix baking mix, cheese, and raw ground beef together with hands. Mold into various small shapes. Place in ungreased baking pan without touching.

    Bake meat pieces for about 20 minutes until brown and firm.

    Meanwhile, bring water, rice, salt, and butter to a boil. Stir, cover, reduce to low, and simmer 14 minutes without lifting the lid.

    Fluff rice with a fork. Arrange meat pieces over rice and serve.
