Carrot Stuffing Casserole

Tender cooked carrots folded into cream of celery soup, onion, and chicken stuffing mix with Cheddar cheese, baked until golden. An easy vegetable side dish.

  • 4 cup sliced carrots, cooked and drained
  • 1 can cream of celery soup
  • 1 onion, chopped
  • 0.5 cup margarine or butter, melted
  • 1 cup sharp Cheddar cheese, shredded, divided
  • 1 box chicken-flavored stuffing mix

Instructions

    Preheat oven to 350°F.

    Mix together carrots, soup, onion, margarine, ½ cup Cheddar cheese, and stuffing mix.

    Put into a greased 2-quart casserole dish.

    Top with remaining ½ cup Cheddar cheese.

    Cover and bake at 350°F for about 30 minutes until bubbling.
