Carrot Salad Supreme

  • 1 0.5 cup grated carrots, lightly packed (3 large carrots)
  • 1 rib celery, diced
  • 0.5 cup raisins
  • 0.5 cup nonfat cottage cheese
  • 1 tsp dried minced onion
  • 3 tsp apple juice concentrate
  • 0.1 tsp cayenne pepper
  • 0.1 tsp curry powder
  • 4 cup lettuce leaves, for serving

Instructions

    In a salad bowl, combine the carrots with the celery and the raisins. Set aside.

    Prepare the dressing: combine cottage cheese, dried minced onion, and 1 teaspoon apple juice concentrate in a blender or food processor. Blend until smooth.

    Add remaining 2 teaspoons juice concentrate, cayenne pepper, and curry powder to blender and blend thoroughly.

    Mix dressing with the carrots, raisins, and celery.
