Carrot Salad Supreme

- 1 0.5 cup grated carrots, lightly packed (3 large carrots)
- 1 rib celery, diced
- 0.5 cup raisins
- 0.5 cup nonfat cottage cheese
- 1 tsp dried minced onion
- 3 tsp apple juice concentrate
- 0.1 tsp cayenne pepper
- 0.1 tsp curry powder
- 4 cup lettuce leaves, for serving

In a salad bowl, combine the carrots with the celery and the raisins. Set aside.

Prepare the dressing: combine cottage cheese, dried minced onion, and 1 teaspoon apple juice concentrate in a blender or food processor. Blend until smooth.

Add remaining 2 teaspoons juice concentrate, cayenne pepper, and curry powder to blender and blend thoroughly.

Mix dressing with the carrots, raisins, and celery.
