Caribbean Chicken Salad

- 4 boneless, skinless chicken breast halves
- 0.5 cup teriyaki marinade
- 4 cup chopped iceberg lettuce
- 4 cup chopped green leaf lettuce
- 1 cup chopped red cabbage
- 5 0.5 oz can pineapple chunks, drained
- 0.3 cup Dijon mustard
- 0.3 cup honey
- 1 tbsp sugar
- 1 tbsp sesame oil
- 1 0.5 tbsp apple cider vinegar
- 1 0.5 tsp lime juice
- 1 cup tortilla chips, broken

Marinate chicken in teriyaki sauce in the refrigerator for at least 2 hours.

Make honey-lime dressing: blend Dijon, honey, sugar, sesame oil, vinegar, and lime juice with a mixer until smooth. Chill.

Grill chicken 4–5 minutes per side until cooked through. Slice into thin strips.

Toss lettuces and cabbage together; divide into salad bowls.

Top with pineapple, tortilla chip pieces, and sliced chicken.
