Caribbean Chicken Salad

  • 4 boneless, skinless chicken breast halves
  • 0.5 cup teriyaki marinade
  • 4 cup chopped iceberg lettuce
  • 4 cup chopped green leaf lettuce
  • 1 cup chopped red cabbage
  • 5 0.5 oz can pineapple chunks, drained
  • 0.3 cup Dijon mustard
  • 0.3 cup honey
  • 1 tbsp sugar
  • 1 tbsp sesame oil
  • 1 0.5 tbsp apple cider vinegar
  • 1 0.5 tsp lime juice
  • 1 cup tortilla chips, broken

Instructions

    Marinate chicken in teriyaki sauce in the refrigerator for at least 2 hours.

    Make honey-lime dressing: blend Dijon, honey, sugar, sesame oil, vinegar, and lime juice with a mixer until smooth. Chill.

    Grill chicken 4–5 minutes per side until cooked through. Slice into thin strips.

    Toss lettuces and cabbage together; divide into salad bowls.

    Top with pineapple, tortilla chip pieces, and sliced chicken.

    Serve with honey-lime dressing on the side.
