Caramelized Salmon Deviled Eggs
Deviled eggs filled with sugar-seared caramelized salmon, shallots, and mayo, topped with a dollop of caviar.

- 6-oz salmon fillet
- 0 to taste salt and freshly ground pepper
- 0.5 cup sugar for dredging
- 12 hard-boiled eggs, halved
- 0.5 cup mayonnaise
- 1 tbsp minced shallots
- 0.5 fresh lemon, juiced
- 2 oz sevruga caviar

Season the salmon with salt and pepper. Dredge in sugar, coating well. Heat a small saute pan over medium heat. Sear salmon for 2-3 minutes per side until caramelized. Cool completely, then flake into small pieces.

Remove egg yolks to a mixing bowl and place whites on a serving plate. Season whites with salt. Mash the yolks with a fork.

Add the flaked salmon, mayonnaise, shallots and lemon juice to the yolks. Mix well. Season with salt and pepper.

Fill the egg whites with the salmon mixture. Cover and chill completely. Garnish with caviar before serving.
