Caramelized Onion Focaccia
Homemade focaccia bread topped with sweet caramelized onions, olive oil, and coarse kosher salt.
Ingredients
- 2 tbsp olive oil
- 2 cup chopped yellow onions
- 0 to taste salt and freshly ground black pepper
- 1 envelope active dry yeast
- 1 tbsp sugar
- 1 tbsp minced garlic
- 0.3 cup plus 3 tbsp olive oil
- 1 cup warm water, about 110 degrees
- 1 tsp salt
- 3 0.5 cup all-purpose flour
- 3 tbsp kosher salt

Preheat oven to 350 F. In a large saute pan over medium heat, add the oil. Add the onions, season with salt and pepper, and saute until caramelized, about 15 minutes. Cool completely.

In a mixer bowl, combine yeast, sugar, garlic, 1/4 cup olive oil, warm water, salt and caramelized onions. Mix for 2 minutes to dissolve the yeast.

Add the flour and mix with a dough hook until the dough pulls away from the sides, about 5-6 minutes. Transfer to an oiled bowl, cover and let rise until doubled, about 1 hour.

Press the dough into a greased 12x18-inch sheet pan. Let rest 15 minutes. Make dimples with fingers across the surface.

Drizzle with remaining 3 tablespoons olive oil and sprinkle with kosher salt. Bake for 20-25 minutes until golden brown.
