Caramelized Cane Syrup Sweet Potatoes
Sweet potatoes roasted with cane syrup, brown sugar and pecans until deeply caramelized and tender.

- 2 lb sweet potatoes, cubed into 3/4-inch pieces
- 1 stick butter
- 1 cup pure cane syrup
- 0.5 cup brown sugar
- 3 cup pecan pieces
- 1 tsp salt

Preheat the oven to 400 degrees.

Place the sweet potatoes in a large saucepan, cover with water, bring to a boil and blanch for 3-5 minutes. Drain.

In a large saute pan, melt the butter. Stir in the cane syrup and brown sugar. Add the pecan pieces and cook for 3 minutes, stirring constantly.

Turn the potatoes into a mixing bowl. Fold in the pecan mixture and season with salt. Blend to coat evenly.

Pour onto a parchment-lined sheet pan and roast for 15-20 minutes until caramelized and tender.
