Caprese Omelet

A Blackstone griddle recipe for Caprese Omelet.

  • 6 eggs
  • 3 oz cherry tomatoes, cut in halves
  • 1 tbsp fresh basil
  • 5 oz mozzarella cheese, sliced
  • Pepper
  • Salt

    Preheat the griddle to medium-low heat Whisk eggs in a bowl with pepper and salt. Stir in basil. Spray griddle top with cooking spray. Add tomatoes on hot griddle top and sauté for few minutes. Pour egg mixture on top of tomatoes and wait until eggs are slightly firm. Add mozzarella cheese slices on top and let the omelet set. Servings and enjoy.
