  • 1 lb angel hair pasta
  • 0.5 cup butter
  • 1 0.5 cup onions, chopped
  • 5 cup broccoli florets, cut into 1-inch pieces
  • 3 cup mushrooms, sliced
  • 1 0.3 cup yellow squash, thinly sliced
  • 0.8 cup julienne-cut carrots
  • 1 tsp garlic, minced
  • 0.3 cup sun-dried tomatoes, oil-packed, minced
  • 1 0.3 cup crushed tomatoes in puree
  • 0.3 tsp dried oregano
  • 0.3 tsp dried rosemary
  • 0.5 cup Parmesan cheese, grated

Instructions

    Melt butter in a Dutch oven over medium heat. Sauté onions, carrots, and broccoli in butter 5 minutes.

    Add mushrooms, squash, and garlic. Sauté 2 minutes.

    Add sun-dried tomatoes, crushed tomatoes, water, bouillon, parsley, oregano, rosemary, and red pepper flakes. Stir well.

    Bring to a simmer and cook 8-10 minutes until vegetables are tender.

    Cook angel hair pasta according to package directions and drain.

    Serve vegetable sauce over pasta. Top with Parmesan cheese.
