Cannellini Bean Salad

- 1 cup olive oil
- 2 1/3 cup red wine vinegar
- 1 tsp salt and pepper to taste
- 1 pinch dried oregano
- 1 clove garlic, slightly broken
- 2 can cannellini beans
- 2 medium red onions, chopped
- 1 bell pepper bell pepper, cut in small pieces
- 2 tbsp minced parsley
Instructions

For dressing: Mix olive oil, red wine vinegar, salt, pepper, oregano, and garlic together. Let sit at room temperature to blend flavors.

Drain and rinse the cannellini beans under cold water. Place in a bowl.

Add the chopped red onion, bell pepper, and minced parsley to the beans.

Add the dressing and adjust salt and pepper to taste.

Add a little more oregano if desired. Serve at room temperature or chilled.
