California Seared Chicken

A Blackstone griddle recipe for California Seared Chicken.

  • 4 boneless, skinless chicken breasts
  • 0.8 cup balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp garlic powder
  • For garnish:
  • Sea salt
  • Black pepper, fresh ground
  • 4 slice fresh mozzarella cheese
  • 4 slice avocado
  • 4 slice beefsteak tomato
  • Balsamic glaze, for drizzling

    Whisk together balsamic vinegar, honey, olive oil, oregano, basil and garlic powder in a large mixing bowl. Add chicken to coat and marinate for 30 minutes in the refrigerator. Preheat griddle to medium-high. Sear chicken for 7 minutes per side, or until a meat thermometer reaches 165°F. Top each chicken breast with mozzarella, avocado, and tomato and tent with foil on the griddle to melt for 2 minutes. Garnish with a drizzle of balsamic glaze, and a pinch of sea salt and black pepper.
