California Rice Casserole

  • 1 cup onion, chopped
  • 0.3 cup butter
  • 4 cup cooked rice
  • 2 cup sour cream
  • 1 cup cottage cheese
  • 1 leaf bay leaf
  • 0.5 tsp salt
  • 1/8 tsp black pepper
  • 12 oz canned green chiles, drained (3 small cans)
  • 2 cup sharp Cheddar cheese, grated
  • 2 tbsp fresh parsley, chopped, for garnish

Instructions

    Preheat oven to 375°F.

    Sauté onion in butter in a skillet over medium heat until golden. Remove from heat.

    Stir in cooked rice, sour cream, cottage cheese, bay leaf, salt and pepper. Mix gently.

    Layer half of the rice mixture in a buttered 2-quart baking dish.

    Add a layer of half the drained green chiles, then sprinkle with 1 cup of the Cheddar cheese.

    Repeat the layers with remaining rice mixture, green chiles and cheese.

    Bake for 30 minutes until bubbly and cheese is melted. Remove bay leaf. Sprinkle with chopped parsley and serve.
