Cajun Chicken Pasta

- 4 boneless skinless chicken breasts
- 3 tbsp Cajun seasoning, divided
- 1 lb linguine
- 2 tbsp butter
- 2 tbsp olive oil
- 4 clove garlic, minced
- 1 cup heavy cream
- 0.5 cup grated Parmesan cheese
- 0.3 tsp black pepper
- 2 Roma tomatoes, diced
- 3 green onions, sliced

Cook linguine according to package directions; drain and set aside.

Rub chicken breasts with 2 tablespoons Cajun seasoning on both sides.

Heat olive oil in a large skillet over high heat until smoking. Sear chicken 4–5 minutes per side until blackened and cooked through (165°F/74°C). Remove and slice.

Reduce heat to medium. Melt butter in same skillet. Add garlic and remaining 1 tbsp Cajun seasoning; sauté 30 seconds.

Pour in heavy cream and bring to a simmer. Cook 3–4 minutes until slightly thickened.

Stir in Parmesan and black pepper until sauce is smooth.

Add cooked linguine and toss to coat.

Divide pasta among plates, top with sliced Cajun chicken, diced tomatoes, and green onions.
