Cajun Bourbon Chicken

  • 1 lb chicken thigh or leg meat, cut into bite-size chunks
  • 4 oz soy sauce
  • 0.5 cup brown sugar
  • 0.5 tsp garlic powder
  • 1 tsp powdered ginger
  • 2 tbsp dried minced onion
  • 0.5 cup bourbon whiskey
  • 2 tbsp white wine

Instructions

    Mix soy sauce, brown sugar, garlic powder, ginger, minced onion, and bourbon together to make the marinade.

    Pour marinade over chicken pieces in a bowl. Cover and refrigerate, stirring often, for several hours or overnight.

    Preheat oven to 350°F.

    Arrange chicken in a single layer in a baking dish. Bake for 1 hour, basting every 10 minutes.

    Remove chicken. Scrape pan juices and browned bits into a frying pan.

    Heat pan juices, add white wine, and stir. Add chicken back and cook for 1 more minute.
