Cafe Brulot

The classic New Orleans tableside flambéed coffee — cognac and Curaçao with citrus peel, spices, and sugar set ablaze, then extinguished with a stream of strong black coffee.

  • 1 each orange, peel cut into 1-inch by 1/8-inch strips
  • 1 each lemon, peel cut into 1-inch by 1/8-inch strips
  • 3 each sugar cubes
  • 6 each whole cloves
  • 1 each cinnamon stick, 2-inch
  • 1 cup cognac
  • 0.5 cup Curaçao or other orange liqueur
  • 2 cup fresh strong black coffee

Instructions

    Light the burner under a brulot bowl or chafing dish and adjust flame to low.

    Drop the orange and lemon peel, sugar cubes, cloves, and cinnamon stick into the bowl. Pour in the cognac and Curaçao. Stir to dissolve the sugar.

    When the mixture is warm, ignite it with a long match. Stirring gently, pour the coffee in a slow, thin stream, continuing to stir until the flame dies out.

    Ladle into brulot cups or demitasse cups and serve at once.
