Butter Barbecued Salmon
Whole salmon stuffed with mushrooms, green onions, and Parmesan, grilled in foil with butter and lemon.

- 8 lb whole salmon, cleaned
- 1 tsp salt, to taste
- 0.5 tsp pepper, to taste
- 2 cup chopped mushrooms
- 1 cup chopped green onions
- 2 tbsp minced parsley
- 0.5 cup Parmesan cheese, grated
- 1 whole lemon, grated peel and juice
- 0.5 cup butter or margarine, melted
- 4 whole lemon slices

Place salmon on double-layer foil (3-4 inches longer at each end). Sprinkle inside and out with salt and pepper.

Combine mushrooms, onion, parsley, Parmesan, lemon peel, and juice. Spoon into fish cavity.

Pour melted butter over fish; top with lemon slices. Seal all sides of foil completely.

Place on grill 4-6 inches from coals. Turn after 30 minutes; cook 20-30 minutes longer. Open foil during last 10 minutes if using smoke grill. Serve with butter, chili-cheese, or tartar sauce.
