Busy Day Casserole
The ultimate dump-and-bake casserole: cubed beef slow-baked in golden mushroom soup and dry onion soup mix, served over rice or noodles with optional sour cream.

- 3 lb lean beef, cubed
- 2 can golden mushroom soup (10.5 oz each)
- 1 envelope dry onion soup mix
- 4 cup cooked rice or egg noodles for serving
- 8 oz sour cream (optional)

Preheat oven to 325°F.

Place cubed beef in a Dutch oven. Add both cans of golden mushroom soup and the dry onion soup mix. Do not stir—just layer.

Cover and bake for 2½ to 3 hours until the beef is very tender and the sauce is rich and brown.

For company, stir in sour cream just before serving.

Serve over hot cooked rice or egg noodles.
