- 8 count 8-inch flour tortillas
- 1 0.5 cup tomato juice
- 1 envelope taco seasoning mix
- 1 tbsp vegetable oil
- 0.5 lb ground beef
- 1 can (16 oz) refried beans
- 3 cup shredded cheddar cheese, divided
- 1 count small avocado
- 1 tbsp fresh lemon juice
- 1 0.5 cup shredded iceberg lettuce
- 1 cup tomato, chopped

Wrap tortillas in foil; bake at 350°F (175°C) for 15 minutes until warm. Keep warm.

Combine tomato juice, taco seasoning, and oil; stir well and set aside.

Brown ground beef in a skillet, breaking up into crumbles; drain. Stir in refried beans and 1/2 cup tomato juice mixture. Simmer 5 minutes.

Spoon 1/4 cup beef-bean mixture and 2.5 tablespoons cheese down the center of each tortilla. Roll up and place seam-side down in a lightly greased 13×9-inch baking dish.

Pour remaining tomato juice mixture over the burritos. Cover and bake at 350°F for 30–35 minutes.

Uncover; top with remaining cheese and bake 5 minutes until melted. Peel and cube avocado; toss with lemon juice. Top with avocado, shredded lettuce, and chopped tomato. Serve immediately.
