BURNED PEACH ICE CREAM

  • 2 cup half-n-half
  • 1 cup whipping cream
  • 0.5 cup sugar
  • 0.5 cup peach preserves (not jelly)
  • 1 each vanilla bean, split and scraped
  • 4 each peaches, halved, seeded and grilled or broiled until brown
  • 1 each ) Combine all ingredients (including the bean and its pulp) in a large sauce pan and place
  • 2 each ) Attach a frying or candy thermometer to inside of pan. (see note below)
  • 3 each ) Stirring occasionally, bring the mixture to 170 degrees F.
  • 4 each ) Remove from heat and strain into a lidded container.
  • 5 each ) Cool mixture, then refrigerate mixture overnight to mellow flavors and texture.

    As soon as you see a bubble his the surface, remove it from the heat.
