Buffet Tuna Salad

A dressed-up tuna salad with celery, onion, garlic, red pepper, and seasoned bread crumbs moistened with chicken stock, served on chicory with lemon wedges.

  • 12 oz canned tuna (2 cans), drained
  • 3 ribs celery, diced
  • 1 medium onion, chopped
  • 4 clove garlic, minced
  • 0.5 red bell pepper, chopped
  • 0.3 tsp white pepper
  • 1 0.5 cup mayonnaise
  • 2 cup seasoned bread crumbs
  • 1 cup chicken stock
  • 1 head chicory, for serving
  • 1 lemon, cut into wedges
  • 1 tsp paprika, for garnish

Instructions

    Combine tuna, celery, onion, garlic, red pepper, and white pepper; mix well.

    In a separate bowl, mix bread crumbs with chicken stock. Add to tuna mixture and combine.
